I imagine salesforce has been updated since it was written so here is the updated one: Click Setup Under ‘Build’ on the left sidebar open Activites and then ‘Task Fields’ In this list you will see ‘Subject’, click on that. Then under ‘Task Subject Picklist Values’ press the ‘new’ button and filll in as many new subjects as you want.

Click on Subject. Under the Task Subject Picklist section, you will see all the drop down options. To add a new Subject option, click the New button. Enter the new subject (or subjects) in the box.
